For their April guest pizza, Pizza Pilgrims have teamed up with their old pals, Stuzzi, legends of the Leeds restaurant scene, to search for Napoli's favourite pasta sauce, Genovese.
Genovese translates as "from Genoa", but it's actually from… Napoli. It is the beloved and lesser-known brother of traditional Neapolitan Ragu, but it hasn't had much airtime outside of the city walls.
In a hope to change this - earlier this year Pizza Pilgrims and Stuzzi travelled to Napoli to track down the best Genovese and bring it back for a tasty pizza collab.
When they landed in Napoli and asked where to enjoy the best Genovese in town, almost all paths led to a man named Alfonso.
Alfonso's restaurant has been open since the '60s so he knows a thing or two. He welcomed the guys into the kitchen to talk all things Genovese. Alfonso swears "it's all about the onions" - reducing and caramelising to release the sweet flavour, low and slow for as long as possible.
Back at the pizzeria in Leeds Stuzzi and Pizza Pilgrims worked together to create a pizza using Alfonso's sauce recipe, smoky provola mozzarella and Pecorino Romana DOP to create a Genovese pizza fit for Alfonso, The Genovese King!
